You hit on a lot of great points, and covered some great supplements, especially the essential fatty acids, which everyone should take whether they are gaining weight or not.
One of the most important concepts of weight gain though is that the amount of calories you consume must be greater that the number of calories you burn. No weight gain supplements are going to help you if you don't get enough calories.
Another great thing to try is to get a food journal, and record what you eat daily as well as your weight, try this for a month and increase your average daily intake by about 200 calories. after the month you can see whether you are gaining weight at a good pace or not and you can go from there.
